100/200 Kitchen

Hamburg, Germany

There’s something theatrical about this loft-style restaurant overlooking the River Elbe. The lighting is dim, with a spotlight on each table to highlight the food. The kitchen is open so you can watch chefs Thomas Imbusch and Sophie Lehmann dance through each service. But the star of the show is the Molteni stove, which operates at between 100° and 200°C (hence the name) and cooks a series of unusual cuts of meat to perfection, which the chefs butcher and age on site and bring to the table themselves for a lovely, personal touch. A surprise set menu of four courses changes every few months, with previous themes including fish-focused ‘water and salt’ and entirely vegetarian ‘the season’. The drinks list focuses on organic wines from small German producers. Próst.
