As the flagship bar at the opulent Four Seasons Astir Palace, Avra looks the part, with its marble-topped bar, mirrored detailing and show-stealing, sea-facing terrace – just the spot for a gimlet as the sun sets over the Aegean. Kudos to the team, then, for creating a bar with substance as well as style: there’s no place for watered-down mojitos here, or clichés of any description. Instead, there’s a menu of forward-looking cocktails, dreamt up by Nikos Tachmazis, whose resumé includes stints at some legendary London address. They include the gamechanging 69 Colebrooke Row, where Tony Conigliaro infused drinks with flint and lichen, and served his Prairie Oysters with clarified tomato-juice yolks. Tachmazis takes a similarly experimental approach at Avra, with a dedicated in-house lab where new ideas are explored. The menu changes seasonally but always features local flavours, whether it’s a hit of mastiha or herbs from the hotel’s gardens.
