Sublime doesn't just celebrate Guatemalan cuisine, it looks to define it andput this underrepresented country on the culinary map. The mission is so pronounced that each dish in the 12-course tasting menu explores the country's evolution through the ages, with each dish offering a sense of the historical milieu from which it comes. Diners travel through the pre-hispanic era (smoked tomato soup, crispy amaranth, concasse tomatoes and guaque chilli) to the Spanish conquest (yellowfin tuna, smoked sapote, watermelon infused with tangerine and lime), to colonisation (lobster and catch of the day with tempura shrimp, plantain purée, roasted pineapple and tapado sauce), then independence, and the 20th and 21st century – brought to life in a tribute to the capital's Korea Town, with a bulgogi dish featuring Guatemalan kimchi. Duck into the Cocktail Lobby on-site for a fun drink if you arrive early, or post-meal if you want to end the night on with a fun serve (drinks served via miniature toy bus, anyone?)
