The Savory Project

Hong Kong, China

The Savory Project, located in Hong Kong's vibrant Soho district, was founded by the award-winning team behind COA, who held the No.1 spot on Asia’s 50 Best Bars list for an unprecedented three years in a row. Instead of operating in its sister bar’s shadow, The Savory Project carved its own path and was honoured with the London Essence’s Best New Opening Award 2024 at Asia’s 50 Best Bars, distinguishing itself by focusing on, as the bar’s name suggests, cocktails that spotlight savoury, earthy and umami flavours. The menu features adventurous creations such as the Indian-influenced Biryani (ghee, biryani masala, tequila, plum, tonka bean, pineapple, peppers), the superstar Thai Beef Salad (clarified peanut rum, beef essence, coconut water, bird’s eye chilli, makrut lime) and other culinary concoctions that rely on common Asian pantry items such as ponzu, shiitake mushroom, miso, msg and cumin to augment their precise cocktails and non-alcoholic serves. With an ambiance enhanced by the hexagonal bar designed to foster connection between guests and the creative bar team, and the warm tones and mixed materials of marble, metal and wood, The Savory Project is as inviting as it is nuanced.
