Set among tropical tamarind trees and modelled on a traditional Mangalorean home – complete with thatched roof, dark wooden rafters, beaten brassware and colourful tiles – Karavalli is renowned for bringing vibrant, deeply aromatic flavours to the table. Operating since 1990 in the gardens of the Taj Gateway hotel, the restaurant pays homage to India's four southern states, with a particular focus on the coast. A team of talented local chefs bring a mixture of research and home-grown generational recipes to the experience – former executive chef Sriram Aylur, who helped to build the restaurant's stellar reputation, moved to London to open the renowned Quilon. Aromatic spices and homegrown chillies add punch to fresh-from-the-ground vegetables, fish delivered directly from the coast and meats. Tiffin carriers bring guests fiery regional dishes, such as prawns cooked with coriander and saffron or crab milagu in a pepper masala. The wood-fired curries are matched with perfectly cooked rice.
