One of India’s most forward-thinking fine-dining restaurants, Masque offers a ten-course tasting menu by head chef Varun Totlani. Ingredient-driven dishes include lamb brain paniyaram or turmeric scampi, while a vegetarian version offers sweet potato paniyaram or morel and gutti aloo. Totlani's daring approach to his country’s cuisine includes reinventions of classic dishes, such as his take on makkai mathri (corn and hemp seed crisps) served with charred corn, Kashmiri chilli and a range of chutneys. There’s also an extensive wine list, a cocktail menu inspired by ancient Ayurvedic philosophy and the option for customers to infuse their own gin.
