One of India’s most forward-thinking fine-dining restaurants, Masque offers a ten-course tasting menu by chef Prateek Sadhu. Ingredient-driven dishes include lamb brain paniyaram or turmeric scampi, while a vegetarian version offers sweet potato paniyaram or morel and gutti aloo. Sadhu’s daring approach to his country’s cuisine includes adding edible ants to a dessert of rich Pondicherry chocolate. There’s also an extensive wine list, a cocktail menu inspired by ancient Ayurvedic philosophy and the option for customers to infuse their own gin.
