A 25+ policy ensures a slightly more sophisticated, mature crowd, while creations such as A Forest With No Trees – gin, caramel, melon liqueur, lemon and mint, all manipulated with redistillations and foams – underline a penchant for innovation. Zero-waste and wow-factor are watchwords, and the use of techy gadgets and complex methods (for example, removing the sugar from bubblegum syrup to leave it fragrant but entirely dry-tasting) highlights the elevated ambition and competency of the team. Pair some of the icons, such as Carnivorous, made with beef jerky, fermented red rice and Tabasco, with a satisfying bowl of noodles or deep-fried snacks to stave off hunger.
