Reflecting Indonesia’s inimitable mix of cultures and culinary traditions, Esa offers something new and thrilling: what chef-owner Aditya Muskita calls ‘New Jakarta cuisine’. Set in the business district, it serves one of the city’s most talked-about tasting menus: an epic 14 courses in the evening, though you can go a la carte at lunch. There might be a tiny tartlet piled with salmon roe and stracciatella, a fragrant charred squid curry, or steak and rice with salted egg and rich, earthy kluwak-nut sauce. Other dishes nod to Muskita’s past and formative memories, from making chicken porridge at his parents’ market stall to working in some world-class kitchens, including Will Goldfarb's Room4Dessert and Daniel Boulud in Singapore. His time at Relæ, meanwhile, inspired his best-known dessert; a palate-tingling black-mint sherbet with freeze-dried strawberries and wasabi.
