Ancient past meets the future at 7:1 lab in Tel Aviv, where avant-garde cocktail techniques unfold within the walls of a beautifully restored 100-year-old building. A central work station serves as the bar, allowing the tables that flank the space to have an unobscured view of the mad scientist-like mixologists at work. The hallmark of the programme is spirits distilled in-house, which serve as the baseline for innovative drink ideas. For example, the bar’s signature Fake Champagne cocktail combines gin, Cocchi Americano, lychee liqueur, coconut cream, lemon juice, clarified milk and jasmine tea to mimic the flavour of sparkling wine – the drink takes three days to make. Located in the Neve-tzedek quarter of the city, the bar also offers upscale Japanese cuisine from chef Yama-San of TYO.
