Tel Aviv, Israel
Creativity abounds at this beloved Italian restaurant. One of the city’s flagship dining rooms, it’s a perfect balance of formal yet unfussy that has garnered many a regular over the years. The refined space, with its towering wine of wall, is the perfect foil for reinvented Italian classics. Chef David Frenkel is a culinary whizz, ensuring each ingredient holds its own on the plate, championing every addition singularly as well as in relation to the whole. See a mackerel tartare with a sunshine-evoking citrus purée, pickled garlic and refreshing cucumber. Or the elegant pork cheek tortellini with asparagus, aubergine cream and a hint of chilli dressed with edible flowers and a cheese, potato and date tartlet. Desserts like chocolate semifreddo on a savoury rye crumb with grappa-toffee drizzle and halva and cocoa pudding with olive oil and sweet corn ice cream take it one step further.
