A minimal fit out – including recycled wooden furniture made by the inmates of the Penitentiary Institute of Bollate – reflects joint head chefs Francesco Salvatore and Andrea Zazzara's belief that great food must be produced with ethical values. This chef-duo brings creativity and a healthy attitude to adventure to Campania’s finest seasonal ingredients. Signature serves include spaghettini cooked in fermented pasta water served with chickpea miso, while seasonal dishes may be the likes of shredded red turnip presented like a flower in a pool of almond milk and lemon leaf oil. About 80% of the wine list is biodynamic and natural.
