A minimal fit out – including recycled wooden furniture made by the inmates of the Penitentiary Institute of Bollate – reflects Marco Ambrosino’s belief that great food must be produced with ethical values. This young chef brings creativity and a healthy attitude to adventure – honed at Melograno in Ischia and Noma in Copenhagen – to Campania’s finest seasonal ingredients. Signature serves include spaghettini cooked in fermented pasta water served with chickpea miso, while seasonal dishes may be the likes of shredded red turnip presented like a flower in a pool of almond milk and lemon leaf oil. About 80% of the wine list is biodynamic and natural.
