Star Sicilian chef and champion of his native cuisine, Ciccio Sultano ensures that la dolce vita is alive and well in the baroque hilltop city of Ragusa, where he opened Duomo in 2000. Duomo has four small dining rooms, elegantly decked out in blue, red, orange and green, respectively, where guests have the choice of going à la carte or opting for a five- or eight-course tasting menu. At lunch, there’s a good-value four-course set menu. Vibrant dishes have a tendency to overshadow even the dramatic views of the neighbouring Duomo di San Giorgio cathedral, with Sultano riffing on generations-old recipes, reinterpreting them in startling new ways. His love of unusual flavour combinations and creating complexity shines in the likes of spaghetti Taratatà with bottarga and citrus, while his early days, spent working in a pastry shop in Vittoria, show in standout desserts including the ricotta-filled cannoli.
