When a restaurant can count Wolfgang Amadeus Mozart, Friedrich Nietzsche, Maria Callas and Audrey Hepburn among its former patrons, you know you’re onto something special. Del Cambio (meaning ‘the exchange’) opened in 1757 and has emerged from a recent renovation with its 19th-century frescoes and gilded boiseries looking more lavish than ever. Matteo Baronetto goes back to his Piedmont roots to come up with creative versions of classic dishes. Think crème brûlée made with olive oil, vanilla pods and squid, and a lighter version of traditional la finanziera (veal sweetbread). Bar Cavour, a sophisticated cocktail bar, is located on the first floor.
