Just a stone’s throw from his father’s restaurant (Furuta in Tokyo’s upmarket Ginza district), Chiune seats just six along a minimalist wooden counter – the perfect number for delivering food of the highest possible standard, according to the second-generation chef. Dishes include barbecued wild boar from Furuta’s native Gifu prefecture in central Honshu, and his signature Shaoxing wine gelato, prepared right in front of diner’s eyes.
