Sushi Ishijima

Tokyo, Japan

Sushi Ishijima is a classic eight-seat Tokyo sushi restaurant, with a daily menu devised based on the market's best produce each morning. Guests enter the unassuming grey building via a green-curtained door and enter a little dining room clad in neutral tones and dominated by the wooden chef's table. At lunchtime there's a modestly-priced omakase (chef's choice) sushi menu priced from just $45 for a dozen pieces, which is the talk of Tokyo: make a reservation or be prepared to join the lengthy queue. In the evening though, the chefs really flex their muscles and send out a selection priced at a somewhat heftier $235. Pieces could include charcoal-grilled Matsutake mushroom nigiri, octopus boiled in cherry blossom or conger pike and shiba shrimp omelette – also, don't miss the homemade miso soup.
