A vanilla-coloured, timber-fragranced ode to good taste. The 12-seat hinoki counter is carved from a single piece of timber, while a restrained display of seasonal flowers is created daily by the chef himself. Harutaka Takahashi spent ten years as apprentice to Jiro Ono, who shot to fame in the award-winning documentary ‘Jiro Dreams of Sushi’. While his sushi shares the generous cuts of fish and heavily vinegared rice of his mentor, Takashi also offers a selection of imaginative otsumami (appetisers), such as tilefish in clear onion soup and grilled mackerel.
