The very stylish Ishinohana, from bartender Shinobu Ishigaki, makes extensive use of seasonal fruit and vegetables to create cocktails such as the ‘White Peach G&T’, which combines Beefeater Gin, white peach from the Yamanashi Prefecture, lime, kirsch and tonic water. Or try the ‘Passionfruit & Carrot Collins’, with carrots from the Miyazaki Prefecture and wasanbon Japanese sugar syrup.
