Den Kushi Flori is a restaurant with some serious lineage, which it wears so proudly that it's right there in the name. A collaboration between Zaiyu Hasegawa, formerly of Den (No.1 in Asia's 50 Best Restaurants 2022 list) and Hiroyasu Kawate previously of Florilège (coming in at No.3 in 2022), serving skewers 'kushi' gives us the delight that is Den Kushi Flori. Serving exclusively tasting menus – six courses at lunch and eight at dinner – the food here is a fusion of Japanese and French ingredients and techniques, but with everything served on skewered making for inventive dishes like a signature skewered bonito terrine, combining marinated bonito fillet, bonito tartare, with shiso and myoga garnished with flower tempura, chorizo ​​sauce, and lemon cream sauce. Having only opened in late 2020, Den Kushi Flori is clearly set for big things.
