Everything about this old-time cocktail bar is informed by the figure of Jerry Thomas, a bartending pioneer who published the first ever cocktail recipe book, the Bartender’s Guide, back in 1862. The team behind Jeremiah, the same that is behind Kyoto speakeasy Bee’s Knees and Yokohama’s Newjack, have taken significant inspiration from this seminal work, while bringing some Japanese influences of their own. The Blue Blazer, for example, a Jerry Thomas classic, becomes the Reviver Blazer, made with keffir lime gin, umeshu, jasmine, lemon and absinthe, while the Sherry “No” Cobbler combines fino and manzanilla sherries, clear orange juice, cardamom and white peach wine. The bar itself, hidden behind a door resembling the cover of the Bartender’s Guide, is right out of the late 1800s – and the bartenders look the part too.
