This three Michelin star restaurant is accessed via a stone path purified with water in accordance with Shinto traditions, at the end of which a pond glimmers with brilliant red fish and traditional umbrellas hang ready for guests' use in the event of rain. This attention to detail extends to the traditional kaiseki cuisine, served at a seven-seat counter and in minimalist private rooms, which can accommodate up to six. Chef Hideki Ishikawa, who is from Tsubame in the Niigata Prefecture, studied under the Japanese culinary greats, before opening his eponymous restaurant in 2008. Twenty years on and his multi-course tasting menu is still a feast for the senses, built around seasonality with the likes of crispy sea turtle croquettes, buttery horsehead snapper and clay-pot rice showstoppers.
