Satoru Tanaka, aka ‘the Boss’, was destined for steak things. His grandfather was a cowherd and dealer, and his father ran a butcher’s shop. Following in these family footsteps, Tanaka has been perfecting the art of butchery from the tender age of 10, opening his first barbecue restaurant when he was 25. Fast forward a few decades and his culinary empire now encompasses 18 restaurants, including this refined Ginza steakhouse. The tasting menu naturally emphasises prime Wagyu and 50-month-old Kobe beef, but with 10-plus courses, there are plenty of other delights in store. You’ll begin with a ‘hassun’ (starter), followed by a seasonal bowl, sashimi, a grilled dish, a meat dish, meat sushi, oshinogi (a small rice dish), a spécialité (steak of the day), a main dish and dessert. Dishes flex with the seasons and chef’s mood, but expect melt-in-the-mouth liver, supremely succulent beef and flavoursome curries. The bossman is on hand to put diners at ease and share his passion for all things meaty. Seating 28, the dining room is dark, intimate and atmospheric.
