Stark and almost surgical are words that spring to mind when describing the interiors of this experimental restaurant. A grey marble dining counter, populated by besuited 30-somethings, is cocooned between polished concrete floors and gun-metal paintwork. However, chef Yusuke Namai's French-inspired tasting menus are as colourful as they come. Appetisers served in jewel boxes reference his favourite manga series from his youth, while a signature serve of marinated sanma (Pacific saury) topped with shards of bamboo charcoal meringue demonstrate his willingness to fuse European cooking techniques with whimsical Japanese ingredients.
