Don't let the low-key decor and eight covers fool you. This is the world's best sushi restaurant and an Asia's 50 Best regular. Those lucky enough to get a booking – there's no website and the phone is said to be answered only on the first day of the month – can expect the best flavours and textures the sea has to offer. Chef Takashi Saito serves delicacies such as sea urchin, eel, octopus, mackerel and a variety of cuts of tuna with rice seasoned with slightly more salt than is customary and mild red vinegar. A private dining room seats a further seven covers.
