Powerhouse British chef Daniel Calvert burst onto Tokyo’s restaurant scene after stints in establishments across London, New York and Paris. Bringing modern French cuisine to Tokyo, he is at the helm of Sézanne, found within the Four Seasons. As the name suggests, the restaurant draws inspiration from the town of the same name in France’s Champagne district, and has a cellar full of top-of-the-range fizz, artisanal sparklers and vintage cuvées. Sézanne has a seasonal menu, from which diners might expect the likes of bouillabaisse with saffron from the Saga Prefecture, and fugu from the Yamaguchi Prefecture cooked on the bone with fugu shirako (pufferfish milt) and roasted kegani sauce (horsehair crab). The dining room is minimalist and immaculate, thanks to the ministrations of designer André Fu. Accents of pastel pink and blue are splashed across the cream interior, creating a relaxed and inviting atmosphere.
