Understated Tokyo refinement

A sage-hued, timber-fragranced ode to good taste. The 12-seat L-shaped counter is carved from a single piece of hinoki timber, while the chairs are constructed without sullying their aesthetic with a single nail. Ceramics are carefully sourced from artisans around Japan, while a restrained floral display is created daily by the chef himself – Harutaka Takahashi. Takahashi spent ten years as an apprentice to Jiro Ono, who shot to fame in the award-winning documentary 'Jiro Dreams of Sushi'. While his nigiri sushi shares the generous cuts of hyper-fresh fish and heavily vinegared rice of his mentor, Takahashi and his team also offer a selection of imaginative non-sushi otsumami (appetisers), such as tilefish in clear onion soup; pike conger cooked in a hamo dashi gelée; abalone in a yuzu sauce; and grilled mackerel. Koshihikari rice is cooked slightly firm – flavoured with Noto Peninsula salt and Shiragiku white vinegar.
