From ramen bars to sushiya, Japan is a master of the specialty restaurant. So it tracks that here you’d also find Yama, an intimate Ebisu space entirely dedicated to the craft of ultra-fine desserts. Using antique tableware on a marble counter, lined in just six vintage rosewood seats, chef Koichi Katsumata serves his version of okashi (sweets). Seasonal fruit, much of it sourced from near his hometown in Yamanashi prefecture, is elevated to spectacular proportions in a no-option tasting menu. Blurring lines between savoury and sweet, dishes move from a 10-items amuse bouche to warm courses and a ‘main’, with paired herbal teas served in elegant wine glasses alongside. Come in late spring and dishes will feature Miyazaki mango; in the summer, peaches; and chestnuts in winter. In a country of sky-high culinary achievement, Yama – which means mountain in Japanese – is peak sweet perfection.
