In an unassuming residential district of Motoazabu, Sushi Shunji shines as the debut restaurant of Shunji Hashiba – a 16-year protégé of global sushi icon, Takashi Saito. The space and menu are reminiscent of Saito's signature style of restrained confidence. Just 10 guests per evening gather around a sparse, beautiful counter of pale wood and handmade ceramics, where Hashiba's Edomae-style omakase unfolds with meditative precision. Highlights include the uni futomaki sushi roll packed with sea urchin and garnished with silky unsalted sujiko roe; and the stir-fried tiger prawns with dashi and sesame oil, which pays homage to Spanish tapas. Premium Hokkaido Yumepirika rice, seasoned with aged red vinegar, is shaped into rolls and nigiri with barely a touch. To drink, a Burgundy-leaning wine list pairs beautifully with sashimi. Toast with the curated sake selection, which ritualistically arrives in handpicked ceramic bowls.
