Majora, in Amman’s upscale Al Swaifyeh neighbourhood, isn’t just a portmanteau of the owners’ names – three friends called Mario, Jonas and Raed. It’s also Latin for ‘towards greater things’, which spells out their culinary ambition and innovative spirit. The menu leans into the founders’ own heritages, fusing Italian, Hawaiian and Jordanian influences, tied together neatly with years of experience in hospitality. Sit in the light, airy restaurant or ask for a table on the patio amid the exotic plants. The menu takes the form of sharing cold and hot mezze, allowing guests to enjoy small, seasonal plates like fennel cooked three ways; smoked short rib wrap; or cured sea bream with clementines. The Japanese fried chicken and famous crispy hash browns topped with wagyu tartare and egg yolk jam are perennially popular with regulars. And brunch on Saturdays is a big deal.
