Set within the glitzy RuMa hotel, Atas aims to take diners on a culinary tour of the Malay Peninsula through an exploration of top-notch ingredients. Signature dishes include blue tiger prawns with betel leaves and charred coconut sambal and hand-dived scallops with soy dressing and kaffir lime. Flavours are balanced but not bland – bitterness contrasted with sweetness is a recurring feature – and as much attention is paid to texture as taste. Executive chef Tyson Gee was born in Vancouver and trained in Melbourne; he brings a global perspective to the menus here, not least in puddings that combine western technique with local flavour in the like of pandan crème caramel. The contemporary surroundings are as striking as the food, with an open kitchen decorated in pewter tiles from Royal Selangor.
