A 1970s concrete building conceals one of the most refined dining rooms in Kuala Lumpur, complete with snowy table linen and a luxe bar for pre-dinner drinks. Darren Chin – who trained at the Le Cordon Bleu culinary school in Paris – presents tasting menus of classic French cuisine overlaid with Japanese influences. Rack of lamb grilled over binchotan coals is served with celeriac and kumquat while white asparagus from the Loire valley is served with succulent scallops from Hokkaido. The 'Chariot de Fromages', with an impressive array of French cheeses, is a theatrical finale and the French bio-dynamic wines pair with precision.
