The Tonala 686 pairs Strega Liqueur and yuzu with sparkling wine, while the bar’s take on a Martinez incorporates Mexican spirit sotol. There’s a well-curated list of the country’s spirits, alongside a handful of whiskies from around the world, and, as a nod to the restaurant’s influences, a sake list too. Bar snacks are firmly back in Mexico, with everything from roasted baby corn to a smoked Oaxaca cheese croquette.
