You can’t walk into Casablanca’s fine-dining showpiece and not be wowed by the design. Conceived by renowned Moroccan architect Ali Lahlou, the aesthetic is a calming contrast to the city’s urban bustle, using raw, natural materials. Crushed black concrete walls, wooden ceiling slats that undulate to create soothing waves, silver travertine on the counters and in bathrooms, all come into play. The restaurant marks the homecoming of chef-owner Fayçal Bettioui after years sharpening his skills in some of the best kitchens in the world. There are just 13 tables, encouraging a meaningful exchange between the culinary team and diners – Bettioui wants it to feel like going to somebody’s house, where you’re welcome to wander over to the open kitchen should you wish. The a la carte and tasting menus combine Moroccan ingredients including fish and seafood that comes in every day by boat (it’s just 200m from the Atlantic) and local produce (70 per cent of the vegetables, salads and herbs are picked from its own gardens, with traditional French and Japanese techniques. Top-notch cocktails and service make it an unforgettable experience.
