A brass door opens onto a spellbinding dining room boasting high ceilings, original artworks, ornate filigree metalwork and designer linens, all accompanied by a gentle soundtrack of musicians playing traditional instruments. Acclaimed Parisian chef Yannick Alléno undertook rigorous research in ancestral dishes of the region – sh’hiwates (Moroccan salads), seafood pastillas, seven-vegetable couscous, amlou ice cream – before creating his lavish à la carte menu (as well as ‘Mahaly’ and ‘Iktichaf’ tasting menus), and it shows.
