Pop-up turned bricks-and-mortar, Bak opened in 2013 on the third floor of a refurbished warehouse overlooking the old timber port of Houthaven. Inside, vaulted ceilings, skylights, warm wood furnishings and a sleek glass wine cellar – home to around 500 labels from Italy and France – set a quietly impressive scene. Ethical sourcing sits at the heart of the kitchen, with chefs sending out precisely composed plates enlivened with colourful foams and garnishes; the wine list's natural options make for a fitting companion. The well-priced prix fixe delivers inventive combinations such as guinea fowl with black walnuts and sea bass with cockles and blood orange. Round off the meal with a refreshing non-alcoholic pairing of kombuchas and seasonal juices made in-house.
