Charmingly informal considering its pedigree, Amsterdam’s 2021-opened, bistro-style De Juwelier comes courtesy of Richard van Oostenbrugge and Thomas Groot, the duo behind the city’s two-Michelin-starred Restaurant 212. Spread across two floors on the lively Utrechtsestraat, the no-nonsense dining room features glossy white-tiled walls and contrasting dark wood with counter seating overlooking the open kitchen. The à la carte menu offers French classics with a contemporary twist, though is perhaps not best suited to vegetarians: veal kidneys, pork head, bone marrow, foie gras, oxtail and pig’s ears all feature. From the ocean, there are Irish oysters, hake and a whole grilled turbot. Sauces are richly nuanced, plates are artfully presented and service is excellent. There’s an extensive wine list, with Burgundy being particularly well represented, and desserts – rum baba, included – are worth saving room for.
