Veterans of the acclaimed De Librije restaurant, chef Sidney Schutte and restaurant manager Sascha Speckemeier are the dream team behind Spectrum (formerly Librije’s Zusje until a restyling in January 2019), housed in Amsterdam’s Waldorf Astoria. Celebrating a proud Dutch culinary heritage in an extravagant 10-course tasting menu, Schutte’s joy-bringing dishes aim to surprise with every mouthful. Homemade bread is served with rich Jersey milk butter; a cheese board is evoked in a savoury cake made with goats’ cheese, lime leaf, beetroot, tamarillo and almond; and even the after-dinner chocolates dazzle.
