Beer-loving capital Amsterdam shows that it’s a dab hand at cocktails too at this drinking hole on the edge of the Red Light District. The name comes from the fact that despite the super central location on Rapenburg, rather subdued signage – just a wee wooden roundel and no other bells and whistles – makes it rather easy to miss. But for those in the know, HPS is a neighbourhood-feeling bar with gentle twists on the classics that have locals coming back again and again. A Bee’s Knees rendition is made with truffle honey and black walnut bitters, lending a darker, savoury edge to the citrussy gin serve. Meanwhile, the house old fashioned is made with a dash of peach and angostura bitters, rippling through a fruity sweetness.
