The name comes from the fact that despite the super central location on Rapenburg, rather subdued signage – just a wee wooden roundel and no other bells and whistles – makes it rather easy to miss. But for those in the know, HPS is a neighbourhood-feeling bar with gentle twists on the classics that have locals coming back again and again. A Bee’s Knees rendition is made with truffle honey and black walnut bitters, lending a darker, savoury edge to the citrussy gin serve. Meanwhile, the house old fashioned is made with a dash of peach and angostura bitters, rippling through a fruity sweetness.
