The traditional Amsterdam cafés of yesteryear – commonly known as ‘bruine cafés’ – were community spots, designed to replicate the cosiness of people’s front rooms, where friends and neighbours would gather to eat, drink and put the world to rights. Zoldering, set on the ground and first floors of a building that dates back to the 1660s, has been designed to capture this nostalgic bonhomie with its open brickwork, wooden tables and soft lighting. The charming team, which includes chef Tomas Bron and sommeliers Job Seuren and Wout Jans, amplify the relaxed ambience – drop-ins are welcome, as are well-behaved dogs. The unpretentious menu ticks off snacks, smaller cold and larger hot dishes, as well as desserts, with approximately half a dozen choices in each section. You’re encouraged to choose what you want, in any order. Pop in for a glass of sherry (a speciality) and a plate of oysters or settle in for an evening of langoustines, ribeye and sticky toffee pudding. It’s totally up to you.
