Auckland, New Zealand
It took three changes of opening date (due to the pandemic) for famous Kiwi chef Ben Bayly’s restaurant Ahi to finally arrive. Undaunted, his vision of a showcase for the very best of New Zealand’s produce – including from his own organic kitchen garden – is a thing of beauty. Located in Commercial Bay, Auckland with harbour views and a stunning light-filled interior, Bayly’s food is both artfully presented and full of flavour. Cooking skills include plenty of indigenous Māori techniques such as hāngi (an underground oven) but also Asian influences like hot-smoked Japanese quail. A set menu of four snacks and four courses uses the ‘trust us’ approach – put your faith in the team’s capable hands and you’ll be well rewarded. Wine selections by co-partner Lucile Fortuna celebrate New Zealand’s fine range (with the odd foray to France and Italy) while, Chris Martin, the third partner, makes sure your welcome is both warm and efficient.
