Hawthorn Lounge will give you a chance to explore the history of cocktails, with recipes dating back to the pre-Prohibition era. The list is far from the stuck in the past, though, with some truly innovative creations on offer. The ‘Marilyn 53’ blends oyster shell-infused Lighthouse Hawthorn Edition Gin, Laphroaig, Chardonnay vinegar and white anchovy oil, while the ‘Gunpowder Corn 'n' Oil’ is a mix of Havana Club rum, Smoke & Oakum Gunpowder Rum, cardamom tincture, lime and house-made falernum.
