The industrial edge and stark interiors of the modern Vulkan development belie the exemplary dishes emerging from the open kitchen set within Kontrast. Close to the Akerselva river, organic local produce, regional technique and hyper seasonality lead the charge, driven by the contrast between the Nordic country's lush summers, bountiful autumns and challenging winters. Chef Mikael Svensson is fastidious about sustainability, minimising waste and sharing the origins of all the dishes placed in front of you, with suppliers listed on the restaurant website. Simple presentation masks the complex nature of what's on the plate. There's just one tasting menu. Expect contemporary takes on classic dishes such as duck liver with meadowsweet and puffed barley; and new potatoes with soused herring, fish roe, Roros sour cream, aquavit and fermented carrots.
