Chef Makoto Okuwa’s journey to the kitchen began in his homeland of Japan at the age of 15 when he completed apprenticeships with prominent sushi chefs Makoto Kumazaki and Shinichi Takegasa. Now his culinary resume spans the world, making waves from Japan to the USA and Mexico City. Makoto’s outpost in Panama also reflects his signature style: traditional Edomae sushi reinvented for contemporary palates, incorporating regional ingredients to add sparks of pizazz. Through his thoughtfully assembled nigiri and sashimi and larger grilled robata and noodle dishes, chef Makoto transports diners with each bite.
