A stable of the Miraflores dining scene for more than 40 years, the founding chef behind this elegant dining spot, Humberto Sato Matsuoka, is credited with helping to shape modern Nikkei cuisine in the Peruvian capital. Today, under the masterful guidance of Sato’s son, Yaquir, Costanera’s kitchen brigade continues to pair premium Peruvian ingredients with classical Japanese culinary techniques to produce signature platters of beautifully presented, Ikizukuri-style sashimi. The expansive a la carte menu skips across continents, offering ceviche, makis, tiraditos and tempura, as well as the Costanera signature: chita a la sal, a salt-baked Peruvian fish that arrives at the table in flames. The generous wine list favours New World bottles. In keeping with its culinary stature, the downtown restaurant is seriously sophisticated: behind its majestic wooden front door, expect to find a hushed ambiance, attentive staff, numerous secluded dining spaces and a clientele that might include politicians and princes.
