Chef Jaime Pesaque honed his craft in some of the world's most decorated kitchens – including El Celler de Can Roca, twice The World's Best Restaurant and now in the Best of the Best hall of fame – before returning home to his home country of Peru. Matya is the first venue he's opened solo. It's developed a reputation for an inventive approach to local ingredients and flavours, married with accomplished technique. As part of their 10-course tasting menu, their signature duck skillet is a delightful mosaic of duck prepared five ways, with seasonal root vegetables sitting against a backdrop of verdant rice.
