Chef Jaime Pesaque honed his craft in some of the world's most decorated kitchens – including El Celler de Can Roca, twice The World's Best Restaurant and now in the Best of the Best hall of fame – before returning home to his home country of Peru. Matya is the first venue he's opened solo, and gained a spot in Latin America's 50 Best Restaurants 2019 list for its inventive use of local ingredients and flavours, married with accomplished technique. It now has a sister restaurant, 500°, also in Lima.
