With legendary restaurateur Elbert Cuenca as its director, this chic French spot was never going to be quietly subsumed by Manila’s dining scene. The team includes hot young chef Miko Calo and veteran manager Alain Borgers running the polished front of house operation, so it is little surprise that there has been a buzz surrounding it since it opened in 2019. The dining room itself is good taste epitomised: double-height ceilings, brass detailing, a bar where you can perch on a velvet stool and tipple your way through a selection of craft gins before dinner. The food itself is equally well-executed. Fourteen small plates can be ordered as individual starters or as a tasting menu to share. At lunch, a short, sharp bistro menu features European favourites like beef bourguignon and steak frites.
