Opened in 2019 by the half-French, half-Filipino chef Stephan Duhesme, this Makati restaurant embraces its mixed background to celebrate Philippine gastronomy and the nation’s profound larder through the touches of France. Within its eight-course tasting menu, expect a range of lesser-known ingredients bolstered by Duhesme’s mastery of fermentation. Think punchy aged tanigue (mackerel) with fermented rice and mushrooms, or banana leaf cake with rice and white beans.
