Every chef follows their own culinary path and Bartosz Szymczak’s is undeniably unique: Polish in origin, Asian in exploration and British in training (under notable names Tom Aikens and Lee Westcott). Now he’s carved out his own niche in Warsaw’s indie Powiśle district with Rozbrat 20, his experimental restaurant on the fringe of the rambling parkland of Rydza-Smiglego. Take your pick of three tasting menus which show off his skill and ambition – short, long or season-specific – and you’ll get dishes like duck espuma with hazelnut, snails with parsley and walnuts or wagyu with onion and buckwheat. Meanwhile the internationally slick dining, with marble, natural woods, soft curves and cloud-like ethereal lighting, feels the culmination of design influences plucked from both near and far. Fitting for a chef with such a diverse CV.
