Lisbon, Portugal

Housed in a former fish factory – complete with soaring ceilings, lush greenery and Roman ruins on display – Prado (‘Meadow’) is led by talented young chef António Galapito. Having returned to take up the post following a stint working with Nuno Mendes in London, Galapito’s menus are a celebration of farm-to-table eating (hispi cabbage, goat's cheese whey and walnuts; cockles, spinach coriander and fried bread; and Iberico pork loin with chard). The wine list, comprising organic, biodynamic varieties, is also worthy of attention, as are the decadent, Instagram-friendly desserts.
