Encanto

Lisbon, Portugal

We have the sustainability-minded Lisbon-born chef José Avillez to thank for dinner-only Encanto, the cosy eatery situated right next door to his more formal Belcanto – one of 20 restaurants in his hospitality empire. Diners ring the bell to be admitted, before stepping into a contemporary dining room with warm wooden floors and tables, chairs upholstered in embroidered floral fabric and bookcases lining the walls and connecting overhead. A single, completely veg-heavy tasting menu focuses on seasonal produce sourced from local smallholders, which might include the likes of confit egg yolks served with Jerusalem artichoke and bean broth; truffled cabbage and onion corn kernels with Azorean island cheese; and meringue served with pinetree cream and kumquats. The creative, finely balanced flavour combinations are complemented by biodynamic wines, craft beers, house-made juices, infusions and kombuchas, which can be ordered à la carte or via the pairing option. Open Tuesday to Saturday – reservations essential.
