It’s the brainchild of award-winning Paul Oppenkamp, whose long-standing menu is one of Romanian roots with international branches: see tandoori brisket with cous cous and aubergine. Elsewhere the likes of traditional borscht with yoghurt, black cherries and Romanian goat’s cheese might speak to the local purist, but under Oppenkamp’s watch is advanced to international standards with the use of molecular-leaning technique.
